This is an eyeball kind of thing once you get into the groove of making salad dressing. The proportions are up to your own taste.
Servings: Enough for 1 salad to serve 5-6 people
Ingredients
1/4 cup olive oil
2 TB balsamic vinegar
1 tsp maple syrup
1/2 tsp dijon mustard (or whole grain mustard)
pinch of salt
freshly ground black pepper
Directions
Add all ingredients to a jar and shake to combine.
Pour over the salad and toss.
Variations
Add 1 clove of smashed garlic. Let it sit for 30 minutes.
Add chopped herbs like chives, dill, parsley, etc.
Substitute honey for maple syrup -- it is harder to incorporate but tastes good.
Substitute red wine vinegar for balsamic or use a combination.
Add lemon juice for some of the vinegar.
Use canola or other non-flavored oil.
Adjust any proportion to your personal taste (more or less vinegar, sweetener, etc.).
