Jicama Orange Salad

Servings: 4-6


Ingredients

  • 1 small jicama (about 1/2 pound)

  • 4 seedless oranges, peeled and sectioned

  • 1 TB freshly squeezed lime juice

  • 1/2 tsp chili powder

  • 1/2 tsp kosher salt (or other course salt)

  • freshly ground black pepper to taste

Directions

  1. Peel the jicama with a knife. Cut into thin slices and then into matchsticks. Place in a serving bowl.

  2. Add the orange sections to the bowl and drizzle on the lime juice.

  3. Sprinkle on the chili powder, salt, and pepper. Mix well.

  4. Cover and refrigerate until serving time.


Variations

  • Substitute blood oranges or grapefruit for the oranges or use a combination of citrus.

  • Instead of sections, peel the orange skin and white pith with a sharp knife, then slice horizontally into circles.

  • Use Tajin instead of chili powder, salt, and pepper.

  • Top with fresh chopped cilantro.
